Can you substitute butter for shortening in banana bread?
Q. I want to make some banana bread, but have no shortening to cream with the sugar. Can I substitute butter or margarine for this, or will it destroy the banana bread? I've never used anything other than shortening, so I'm not sure and figured maybe I'd try something different.

A. Yes it can. But you have to increase the other liquids in your recipe to make up for the amount of oil you aren't putting in. Butter is a semi-solid, so add about one quarter more liquid than teh recipe calls for.

A. H-Man is completely wrong, you do not want cold butter when making a cake. For a pie or biscuit dough where you're looking for flakiness, yes. For boxed cupcakes, you would need to melt the butter and treat it just like the oil. Make sure that the eggs and water are at room temperature because using cold eggs could harden the butter back. Be aware that the cupcakes wont be as moist as if you were using oil. They will be rich, a little more dense, and still great, but not the super light, tender crumb that boxed cakes produce.

Q. I found a recipe for biscotti at allrecipes.com and it calls for butter. I live in Oklahoma and we are in a deep freeze right now and I don't want to go to the store. I just want to hang out in my jammies and slippers and have coffee and biscotti! Also, what is anise extract? A. Margarine, spread, cream cheese or there's a jar of stuff you can buy at the store (in the baking flour aisle) that's supposed to replace butter. You can also use, butter flavor Crisco cubes. I like the idea of keeping them on hand, for when I don't have any butter or margarine.

A. Not knowing what you are cooking, butter may be substituted with margarine or shortening for items such as cakes or cookies with little impact on the recipe. Butter has the better flavor of the three. Apple sauce may also be used in products like cakes however you must adjust your liquids or add a little more flour to get the consistency desired. Further-more one must also remember that apple sauce is a "grainy" or textured product so this might have a slight impact on your finished product. If you are looking to substitute butter for frying, then margarine, shortening, olive oil or other such oils may be used. I prefer to use olive oil. Hope this helps.

A. Substitute equal amounts of butter with oil. A stick of butter is 1/2 cup = 4 oz. = 16 tablespoons. So you should be able to do the math from here. I'd suggest you use your liquid measuring cup if you need 1/4 (2 oz.) or 1/2 cup (4 oz.)

A. Use the salted butter if you have that. If not the margarine should be fine. You're only talking about 1/4 cup so it's not going to make much difference. Sometimes margarine has too much water and will make cookies too flat, but looking at your ingredient list, it really won't make much difference. I'm sure they will turn out fine.
